Frozen dairy is the one application where sugar reduction changes the physics rather than just the flavor.
Our paper on the frozen dessert playbook covers the physics in full. In short: sucrose depresses the freezing point of the mix. That depression controls how much water stays unfrozen at serving temperature, which determines ice crystal size, scoopability, and how the product resists heat shock in distribution. Remove sugar and the freezing point rises. More water freezes, crystals grow larger, and you get a product that is hard out of the freezer and coarse on the palate.
This is why reduced-sugar frozen dairy fails differently from reduced-sugar bakery. The formulation is not flat. It is icy.

Overrun is the percentage of air incorporated during freezing, and it determines density, creaminess and yield. Premium ice cream typically runs 20 to 50% overrun; economy products run higher. Low-sugar mixes produce unstable air cells and faster meltdown at any overrun target.
Because glycerin binds water and raises viscosity, 0.5 to 2% inclusion helps stabilize air incorporation, producing finer cell distribution and more consistent overrun batch to batch. Inulin contributes similarly through added solids, and at 3 to 8% it also emulates fat, which matters in reduced-fat as well as reduced-sugar work.
The formulation that tests well at the plant is not always the one that survives the cold chain. Freeze-thaw cycling in distribution grows crystals in any mix, and reduced-sugar mixes are more vulnerable because there is less unfrozen water buffering the change. Allulose inclusion is the most direct defense.
Erythritol is the obvious bulk choice on cost, and in frozen dairy it is frequently the wrong one. Its high negative heat of solution produces a cooling sensation that in a cold product reads as a defect rather than a feature. Maltitol carries minimal cooling. Allulose carries none.
High-protein frozen dairy and cultured products introduce bitterness and astringency that the sweetener system must work around. Reb M grades such as RM95 and RM95D bring dairy masking that Reb A does not. Thaumatin at 25 to 45 ppm addresses what remains without altering the sweetener load.
Different constraints from frozen. There is no ice crystal problem, but there is a fermentation one.
Sweeteners added pre-culture can affect fermentation kinetics. High-intensity sweeteners are typically added post-culture for that reason. Allulose and tagatose are not fermented by common yogurt cultures, which makes them predictable in the mix.
The sensory problem in cultured dairy is that acidity exposes off-notes a neutral base would hide. Higher-purity stevia grades and monk fruit both perform better here than value grades.

A working sugar free ice cream formulation is rarely one ingredient. It is usually a rare sugar for freeze point, a fiber or glycerin for body, a high intensity sweetener for the sweetness that remains, and often a modulator for the finish. Where bulk and crystallization matter more than freeze point, polyols carry part of the load.

Allulose is excluded from both Total and Added Sugars under current FDA guidance. Tagatose is excluded from Added Sugars. Inulin declares as Dietary Fiber. Sugar alcohols declare under Total Carbohydrate with the sugar alcohol subline where applicable.
For frozen dairy that combination is unusually favorable. A zero sugar frozen dessert built on allulose and inulin can move sugar off the panel, add dietary fiber to it, and keep the texture that made the product worth buying. Very few categories allow all three at once.
