Condiments Hide More Sugar Than Any Other Category

A tablespoon of BBQ sauce can carry more added sugar than a cookie. Ketchup runs roughly a quarter sugar by weight. Teriyaki, sweet chili, salad dressing and dessert syrup are all built on sugar or high fructose corn syrup, and panel scrutiny in this category has tightened sharply in the last five years.

That makes condiments the category where reformulation pressure is highest and where the technical problem is least understood.

What Sugar Is Doing in a Sauce Before You Remove It

More than sweetening, and more than in most applications.

Body and viscosity. Dissolved solids give a sauce its cling. Remove them and the product runs off the food instead of coating it, which reads as cheap long before it reads as less sweet.

Gloss. Sugar solids produce the sheen that reads as quality on a glazed or finished product.

Water activity and shelf stability. Sugar binds water. In a shelf-stable ambient sauce that is a preservation function, not a flavor one.

Acid balance. Tomato, vinegar and citrus systems are acidic. Sugar rounds that acidity. Remove it and the sauce reads as sharp and thin.

Browning in cooking sauces. Glazes and marinades depend on caramelization and Maillard browning on the grill or in the pan.

BBQ Sauce

The largest reduced-sugar opportunity in condiments and the hardest to get right, because BBQ sauce depends on sugar for four things at once.

Caramelization on the grill is non-negotiable. A BBQ sauce that does not char and darken has failed regardless of how it tastes cold. Allulose browns from roughly 220°F, which is lower than sucrose, so glazing behavior changes and often improves. Tagatose browns readily and sits closer to sucrose on sweetness.

Cling. Allulose syrup and tapioca fiber syrup both rebuild the solids that give a sauce its coat. Thin BBQ sauce reads as a defect immediately.

Acid rounding. Tomato and vinegar bases are sharp. Thaumatin at 20 to 50 ppm rounds that edge without adding perceived sweetness, which is a different lever than adding more sweetener.

The molasses problem. Most BBQ sauces carry molasses or brown sugar for depth. CocoSweet® Organic contributes a caramel character that partially covers that gap at 1:1 replacement, though it is a caloric sweetener and does not remove sugar from the panel.

By Format

Ketchup and tomato-based

Roughly a quarter sugar by weight in conventional formulations. The constraint is acid balance and body. Higher-purity stevia grades hold up against tomato acidity better than value grades. Allulose syrup or fiber syrup rebuilds the solids.

Salad dressings and vinaigrettes

Emulsion stability matters as much as sweetness. Glycerin contributes to both, and its humectancy helps in reduced-oil systems where water separation is the risk.

Teriyaki, glaze and marinade

Browning is the whole point. Rare sugars are the only category that delivers it. Watch bake and grill temperatures, since allulose colors earlier than sucrose.

Dessert syrups and toppings

Chocolate and caramel syrups need viscosity and gloss without crystallization. Allulose syrup and glycerin together handle both. See frozen dairy for the topping systems that overlap.

Jams, jellies and fruit spreads

Sugar is a preservative here, not just a sweetener. Water activity has to be managed deliberately rather than assumed. Allulose, glycerin and fiber all contribute. Pectin systems may need adjusting since sugar concentration affects set.

Process Considerations

Water activity is a food safety parameter

In shelf-stable ambient sauces, sugar was doing preservation work. Removing it without replacing that function changes the microbial risk profile. This is the one application where a sugar reduction decision needs a food safety review, not just a sensory one.

Acid stability

Steviol glycosides and mogrosides are both stable at the pH ranges condiments run, through retort and hot fill. Thaumatin is stable across a broad pH range. Rare sugars are stable but will brown at cook temperatures, which is desirable in a glaze and not in a cold-pack dressing.

Liquid handling

Syrup formats matter more here than in dry applications. KetoseSweet® Syrup, Nectevia® and Thaumatiq™ LX can all be metered rather than weighed, which removes a dissolution step from a process that is often continuous.

Labeling

Condiments are where the labeling advantage is most visible, because the sugar line on a sauce panel is the one shoppers actually check at shelf. Allulose is excluded from both Total and Added Sugars under current FDA guidance. Tagatose is excluded from Added Sugars. Fiber declares as Dietary Fiber.

A sugar free sauce built on allulose syrup and tapioca fiber can show zero added sugars while carrying a fiber claim, which is a stronger panel than most reduced-sugar condiments achieve.
