Icon Foods supplies nine sweetener ingredients in bulk to food and beverage manufacturers across North America, in more than 100 grades spanning conventional and organic, multiple particle sizes, and pre-built systems.
The Nine Ingredients

| Xylitol | 1:1 | Sweetness parity, non-cariogenic. Gum, mints and oral care |
| Maltitol | ~0.9x | Closest polyol to sucrose. Minimal cooling, so it holds in chocolate |
| Thaumatin | Modulator | Extends sweetness and reduces off-notes at parts per million |
| Glycerin | ~0.6x | Humectant and body builder. Not a sweetener despite the sweetness |
Choosing Between Them
The useful question is not which sweetener is best. It is which function you are replacing.
Sweetness only comes from stevia and monk fruit. Neither contributes bulk, browning or texture, so both need a partner.
Bulk and structure come from the polyols: erythritol, xylitol and maltitol. None of them browns.
Browning comes only from the rare sugars, allulose and tagatose. No polyol and no high-intensity sweetener participates in the Maillard reaction.
Moisture and shelf life come from glycerin and from fiber syrups.
Finish and off-note management come from thaumatin, which changes perception without changing composition.
