Most sugar reduction work is about sweetness and calories. Confectionery is about physical state.
Sucrose in a candy system is doing structural work: it crystallizes in a controlled way, it holds a glass, it sets a chew, it carries a coating. Whether your product is a hard candy, a fondant, a caramel or a panned center, the sugar is the architecture. Remove it and you are not adjusting flavor, you are rebuilding the physics.
That is why confectionery ingredients for sugar reduction are chosen by crystal behavior first and sweetness second.
Hard candy, chocolate, gummies, chews, panned centers, gum and mints each fail differently when sugar comes out. The ingredient follows the format.

Erythritol and xylitol both carry a pronounced cooling sensation from their high negative heat of solution. In mints and gum that is exactly what you want and it is a selling point. In chocolate it reads as a defect, and no amount of flavor work covers it.
Maltitol carries minimal cooling, which is the single reason it remains the backbone of sugar-free chocolate despite better-tolerated alternatives existing.
Hard candy fails through moisture pickup, surface stickiness and cold flow. Isomalt's low hygroscopicity is the reason it dominates that format. Where a formulation combines polyols, the least hygroscopic component should carry the structural load.
Coating build depends on controlled crystallization at the surface. Standard 20 to 60 mesh grades suit panning; finer grades dissolve too readily and produce soft shells. Our field guide to panned confections without the sugar hangover covers maltitol, isomalt and erythritol in coating systems.
Two things change at scale. Blend segregation, where a high-intensity fraction under 5% separates during transfer and produces batches that are too sweet at the start of a run and flat at the end. We co-mill blends rather than shipping components for that reason. And dissolution time in cook systems, which lengthens with batch volume and is often solved by a finer mesh rather than a formulation change.
This matters more here than in most applications, because confectionery is eaten in quantity and polyols are the bulk of the formula rather than a fraction of it. Erythritol tolerates best. Maltitol and sorbitol tolerate least. Model at your realistic serving size, not your stated one.
Chocolate is the format where ingredient choice is most constrained, and where the wrong polyol is most obvious to the consumer.
Cooling is disqualifying. Erythritol and xylitol both carry a pronounced cooling sensation. In a chocolate that reads as a defect, and no flavor system covers it. Maltitol carries minimal cooling, which is the single reason it remains the backbone of sugar free chocolate despite better-tolerated alternatives existing.
Tempering behavior matters. Maltitol crystallizes predictably enough to run on existing tempering equipment without a process rebuild. That is worth more to most manufacturers than a marginal calorie difference.
Particle size drives mouthfeel. Chocolate is judged on smoothness. Supreme grades at 180 to 220 mesh avoid the grittiness that coarser polyols produce in a conched system.
Sweetness partners. Maltitol at ~0.9x needs modest compensation. Reb M grades and monk fruit both work; Reb M brings dairy masking that helps in milk chocolate. For dark chocolate, where bitterness is the point, thaumatin at 20 to 35 ppm rounds the finish without flattening the cocoa character.
Compound coatings follow the same logic with more latitude, since the fat system is more forgiving than real chocolate.
A different problem entirely. The constraint is solids and water activity rather than crystallization, and gummies are the fastest-growing reduced-sugar confectionery format.
Solids replacement. Tapioca fiber syrup provides the solids that glucose syrup used to, binds moisture, and adds a dietary fiber claim to a category that has never had one. At 5 to 25% it does structural work sugar alcohols cannot.
Chew and graining. Maltitol syrup at 10 to 60% delivers the bite and prevents the graining that ruins a reduced-sugar chew over shelf life.
Water activity. Glycerin at 1 to 5% controls Aw and keeps the bite from hardening. In gummies this is the difference between a product that eats well at week two and one that does not.
Flavor systems. Gummies carry acidic, fruit-forward flavors that expose off-notes a chocolate base would hide. Higher-purity stevia grades and monk fruit both outperform value grades here.

A sugar free candy formulation is rarely one ingredient. It is a bulk polyol chosen for crystal behavior, a high-intensity sweetener for the sweetness that remains, often a fiber or syrup for texture, and sometimes a modulator for the finish.

Sugar alcohols declare under Total Carbohydrate with the sugar alcohol subline where applicable, and products containing significant sugar alcohol may require a laxation statement depending on inclusion and serving size. Allulose is excluded from both Total and Added Sugars under current FDA guidance. Tagatose is excluded from Added Sugars. Fiber declares as Dietary Fiber.
Confectionery is one of the few categories where the laxation statement is a genuine formulation constraint rather than a footnote, because inclusion levels are high. It is worth deciding early which polyol carries the bulk.
