The price of monk fruit keeps climbing. Before anyone starts flipping tables in procurement, there is some good news: this is a formulation problem we can solve.

If COGS are already on your radar, the answer isn’t necessarily to eliminate monk fruit. Monk fruit remains a terrific clean-label sweetener with strong consumer recognition and a very useful sensory profile. The opportunity is to stop asking monk fruit to do all the work.

Instead of treating V25, V40 or V50 as the entire high-intensity sweetening system, we can use monk fruit strategically and let complementary steviol glycosides carry portions of the sweetness curve more economically.

The fundamental economics are pretty simple.  When you buy V25, V40 or V50, monk fruit is carrying essentially the entire high-intensity sweetness workload.

As mogroside V prices increase, your sweetening cost increases with them. Moving toward LS, LS4, RA99M or RM95D changes the equation because you’re spreading that sweetness load across glycosides. Instead of paying one very expensive player to play all 48 minutes, we build a bench.

This is part of the story. The other part, groves lost part of their foot print, while demand increased globally. Less fruit + higher demand = upward pressure on pricing.

MonkSweet™ LS: The Value Bridge

MonkSweet™ LS combines monk fruit with Reb A stevia. This is probably the easiest place to begin reducing monk fruit exposure without radically changing the character of an existing monk-fruit-sweetened product.

Why It Saves Money

Reb A can provide a substantial portion of the sweetness intensity at a considerably more favorable cost-in-use than high-purity mogroside V.

Instead of purchasing enough V40 or V50 to deliver the entire sucrose equivalent, LS lets Reb A shoulder a meaningful percentage of that workload while monk fruit helps round and soften the stevia profile. You get, less mogroside V dependency → lower ingredient cost → lower exposure to monk fruit pricing.

Sweetness Curve

LS comes on relatively quickly. It gives a strong initial sweetness peak, followed by a somewhat longer tail than sucrose. The monk fruit helps soften some of the characteristic Reb A edges, while Reb A provides inexpensive sweetness horsepower.

LS makes particular sense in applications where the matrix already provides flavor complexity:

MonkSweet™ LS4: The Premium Monk Fruit Reduction Strategy

If LS is the value play, LS4 is the sensory play. MonkSweet™ LS4 combines mogroside V with Reb M.

This pairing is particularly interesting because Reb M is one of the cleanest steviol glycosides available. Rather than monk fruit fighting stevia, the two profiles complement one another.

Why It Saves Money

LS4 allows you to retain monk fruit as part of the sweetening system while substantially reducing the amount of monk fruit extract required to reach your sweetness target. And because the system can deliver roughly 250–300× sucrose sweetness, the total usage rate can be extremely low. That is where procurement needs to stop looking only at dollars per KG and start looking at dollars per sucrose-equivalent sweetness delivered. That is the metric that actually pays the bills.

That makes it one of the better tools for approximating the temporal behavior consumers associate with sugar.

A practical development window is approximately, 40–150 ppm (0.004–0.015%). For beverages, I would start low and titrate upward in small increments. At these concentrations, 20 ppm can be the difference between that’s really clean and who invited stevia to the afterparty?

SteviaSweet™ RM95D: Let Stevia Carry the Back Half

RM95D takes the monk fruit reduction strategy one step further. It uses Reb M with Reb D to create a smooth, relatively clean sweetness profile. Its primary advantage isn’t necessarily the front of the sweetness curve. It’s the middle and back.

Why It Saves Money

Instead of using V40 or V50 to supply your entire sweetness target, RM95D can carry a large percentage of total sweetness. That means monk fruit becomes a sensory accent instead of the engine.

You can potentially use a relatively small amount of monk fruit for its characteristic lift and labeling strategy while RM95D does the heavy lifting. That’s a much more resilient COGS model.

RM95D tends to have slower onset → broad middle → smooth peak → extended clean tail. That makes it particularly useful when another ingredient provides the front end. This is why LS4 + RM95D can be such a powerful system.LS4 gives you the front. RM95D fills the middle and back.

RM95D is especially valuable when the formulation contains bitter or difficult components such as protein, minerals, botanicals or vitamins.

Approximately: 50–300 ppm (0.005–0.030%). In protein systems, I would generally build the base sweetness first and then titrate RM95D until the middle of the sweetness curve fills in.

SteviaSweet™ RA99M: The COGS Assassin

If the objective is aggressive cost reduction without falling back to ordinary Reb A sensory performance, RA99M deserves serious attention. RA99M combines predominantly high-purity Reb A with a smaller amount of Reb M. The Reb M improves the temporal profile while Reb A provides economical sweetness intensity.

Why It Saves Money

This is where we can potentially remove a significant portion of expensive monk fruit from a system.

Rather than asking V40 or V50 to deliver 100% of the high-intensity sweetness, RA99M can provide the majority of it while a smaller amount of monk fruit supplies sensory character. You are essentially using the expensive ingredient where it creates the greatest sensory return. That’s ingredient arbitrage.

Sweetness Curve

RA99M is faster than RM95D. Think, quick onset → strong peak → moderate tail. That makes it useful when replacing part of V25 or V40 because it doesn’t leave a giant hole at the front of the sweetness curve.

The Reb M component helps tame some of the harsher temporal behavior associated with straight Reb A.

That is where successful high-intensity sweetener formulation actually happens.

The Sweetness Curve Is Where the Game Is Won

Imagine sweetness intensity plotted against time. Sucrose rises quickly, peaks cleanly and disappears relatively quickly. Traditional monk fruit tends to carry sweetness farther into the finish. The strategic systems let us manipulate each section of that curve. Conceptually:

Sucrose: FAST ↑ PEAK ↓ CLEAN EXIT

V25: MEDIUM ↑ PEAK ───── LONGER TAIL

V40: MEDIUM/FAST ↑ HIGHER PEAK ─── CLEANER TAIL

V50: FAST ↑ HIGH PEAK ── CLEANER FINISH

LS: FAST ↑ HIGH PEAK ─── MODERATE TAIL

LS4: FAST ↑ HIGH PEAK ↓ CLEANER DECAY

And that’s the trick. There doesn’t have to be one winner. This is not a zero sum game.  The best system may be two ingredients doing different jobs.

Where I See the Biggest Opportunities

For an existing V25 system, look first at LS or RA99M. This is primarily an economic move. The formulation probably has enough flavor complexity that absolute sweetness purity isn’t worth paying for. For an existing V40 system, evaluate LS4 or an LS4/RA99M combination.

You can maintain a very clean sweetness profile while materially reducing the amount of mogroside V carrying the system. For an existing V50 system, particularly beverages, evaluate LS4 + RM95D.

This is less about finding a cheaper imitation of V50 and more about building a better temporal system. LS4 handles onset and peak. RM95D fills the mid-palate and finish. A small amount of monk fruit character can remain if desired.

Best Practice: Don’t Do 1:1 Replacements

This is important. Do not take 200 ppm V50 out and automatically put 200 ppm LS4 in. High-intensity sweeteners aren’t flour. Run sensory ladders. For example: control existing V40 or V50 system

Then evaluate progressively reduced monk fruit systems while increasing the complementary glycoside system. Measure: onset → peak intensity → mid-palate → sweetness decay → bitterness → metallic character → licorice → fruit character → lingering sweetness.

The objective isn’t: Which sample measures equally sweet? The objective is: Which sample produces the same sensory experience at the lowest cost-in-use?

Don’t Forget What Monk Fruit Never Did

There is another trap here. None of these ingredients replaces the physical functionality of sugar. If you’re removing sucrose, you’re also removing:

  • Bulk
  • Mouthfeel
  • Solids
  • Browning
  • Humectancy
  • freeze-point depression
  • water-activity management.

That means the high-intensity system may still need to ride alongside allulose, tagatose, erythritol, soluble fiber, inulin, glycerin or another functional bulking system.

Sweetness is only one job sugar was doing. Don’t fire the quarterback and then wonder why nobody is playing linebacker.

The Big Take Home

The steady rise in monk fruit pricing doesn’t require panic. It requires a pivot to better formulation. V25, V40 and V50 remain excellent ingredients. There will absolutely be formulations where they remain the right choice. But paying premium mogroside V prices to supply every unit of sweetness no longer makes sense when we have better tools.
